Детство моё пришлось на пятидесятые годы прошлого столетия и прошло во дворе, сложно было тогда с яслями и детскими садиками ввиду их, практически, почти  полного отсутствия. А вот о школе остались самые тёплые воспоминания, в том числе и о школьной столовке. Готовили для ребятни там божественно. Может быть так видится мне из сегодняшнего далека, всё таки времена были суровые, первое послевоенное десятилетие, идёт восстановление разрушенного войной, особыми деликатесами нас не баловали, но детишки тогда были на первом месте и делалось всё. чтобы наше детство было счастливым и безоблачным.

На переменках в школе мы не только прыгали, скакали и играли, но и умудрялись при каждом удобном случае, и не удобном тоже, сбегать в столовку и перехватить пирожок или коржик, съесть булочку, а на большой перемене съесть что-нибудь и посущественней, ту же котлетку или биточки с пюре. Господи, как это было божественно вкусно! И хотя ассортимент нас особо не баловал, но и того, что было, хватало для ребячьей души с избытком. 

Вот именно оттуда, из тех далёких времён и тянется любовь к пище, «как в школьной столовке». Поэтому, когда наткнулся на приведённый ниже  пост, для меня не стоял вопрос- перепечатывать или нет, однозначно ДА! Пахнуло на меня далёким босоногим и не всегда безоблачным, но счастливым детством. Да, это всё то, что было в нашей школьной столовой и есть прямой смысл сготовить и вновь ощутить вкус далёких уже тех лет и как бы снова ощутить себя маленьким школьником, вспомнить своих Папу и Маму в молодости, свой дом, свой двор и своих верных друзей. Вспомнить разрушенный войной мой родной город Выборг, вспомнить людей, любовно и самоотверженно его восстанавливающих, вспомнить праздничные демонстрации и весёлые лица людей, вспомнить родной Дом пионеров, где нас учили серьёзно относиться к любой работе и порученному тебе делу. Много что вспоминается из той поры, и всего-то надо потратить немного времени и сделать себе любимый пирожок «как в детстве, как в школе!».

Детский сад и школа помимо всего прочего запоминаются нам еще и своей особенной едой. Нельзя сказать, что всех кормили там идеально, но все-таки очень многие люди с благоговением и ностальгией вспоминают блюда, приготовленные заботливыми руками повара. А значит, наш пост будет полезен для них, ведь в нем собраны рецепты тех самых блюд, вкус которых забыть невозможно!

Очень часто дети отказываются есть омлет дома, требуя такой “как в детском саду”.
Отличительной особенностью такого омлета является добавление большого количества молока и продолжительное приготовление в духовке, вместо сковороды. Необходимо использовать небольшую по площади форму, чтобы омлет получился высокий.

Ингредиенты:

  • 6 яиц
  • 300 мл молока
  • 1⁄2 ч. л. соли
  • сливочное масло для смазки формы

Приготовление:

  • 1. Яйца вбиваем в емкость, добавляем соль.
  • 2. Вливаем молоко.
  • 3. Перемешиваем венчиком до однородности, не взбиваем!
  • 4. Форму хорошо смазываем сливочным маслом. Вливаем омлетную смесь. Ставим в разогретую до 200 градусов духовку. Выпекаем 35-40 минут или до загорелой корочки сверху.

Во время приготовления омлет поднимется примерно на 1/3, а после вынимания из духовки опять опустится. Также на дне формы может появится небольшое количество сыворотки, это нормально!

Бытует мнение, что в советском общепите омлеты делали из яичного порошка и сухого молока и из-за этого они были высокими. Но, приготовив по этому рецепту, вы гарантированно ощутите тот самый вкус детсадовского омлета, он так же прекрасно поднимается в узкой форме, а продукты используются только натуральные!

Ингредиенты:

  • 500 гр. говяжьего фарша
  • 60% от объёма фарша мякоти чёрного хлеба, вымоченной в воде или молоке
  • 3 луковицы
  • 1-2 зубчика чеснока
  • соль, перец
  • Панировочные сухари
  • Масло раст. для жарки

Приготовление:

  • Мякоть черного хлеба замачиваем в воде, разминаем, добавляем в фарш.
  • Затем кладем лук, специи и 1 зубчик чеснока, предварительно измельченный.
  • Все вымешиваем.
  • Панируем в сухарях и жарим на среднем огне до корочки, переворачивая.

Приготовление:

1. Сначала приготовим бульон, на основе которого будет готовиться красный соус. Говяжьи кости слегка зажарим в духовке на сухом противне до легкого коричневого цвета. Ленивые могут этого не делать. В столовых делали именно так для придания бульону коричневого цвета и насыщенного вкуса. Зальем водой, даем закипеть. Снимаем пену, добавляем 1 морковь, корешки сельдерея, 1 луковицу, щепотку пряных трав, солим по вкусу и варим на медленном огне не менее 3 часов. 

2. В это время прокручиваем через мясорубку мясо, размоченный в воде хлеб и одну луковицу из подготовленных для биточков. Слегка обжариваем остальной лук для биточков.

3. Добавляем обжаренный лук в фарш, добавляем туда же яйцо, солим, кто желает (или если готовим только для взрослых) — перчим, хорошенько вымешиваем. Формируем круглые биточки, обваливаем в сухарях и Обжариваем (не прожаривая) с двух сторон на сильном огне.

4. Выкладываем биточки на противень с высокими бортиками.

5. Готовим соус. Лук и морковку для соуса мелко нарезаем и обжариваем. Отдельно на сухой сковороде обжариваем муку до золотистого цвета.

6. Томат также отдельно обжариваем на сковороде в масле. Соединяем в кастрюльке обжаренные морковку с луком и томат, заливаем 1,5 литра процеженного бульона и доводим до кипения, варим минут 20.

7. Обжаренную муку разводим в стакане холодного бульона, размешиваем.

8. Аккуратно вливаем разведенную муку в кипящий соус, размешиваем, добавляем лавровый лист, варим минут 10, выключаем. Соус готов.

9. Заливаем биточки на противне соусом, ставим в духовку на 200 градусов на 40 минут.

10. Наши биточки готовы! Очень вкусно! Приятного аппетита!

Приготовление:

1. Приготовить начинку (она должна постоять, чтобы сахар растворился, или можно использовать сахарную пудру).

2. Все ингредиенты сложить в миску и перемешать миксером. Очень тщательно.

3. Приготовить тесто. Сложить в миску мягкое масло, яйцо, соль, пудру и взбить миксером.

4. Всыпать муку с разрыхлителем.

5. Размешать (недолго).

6. Тесто слепить в комок.

7. Разделить тесто на 6 частей (по 70 гр., если у вас есть весы). Каждую часть скатать в недлинную колбаску и раскатать на присыпанном мукой столе. Положить начинку (по 45гр. ). Начинку накрыть половиной теста, так, чтобы она была видна.

8. Выложить на бумагу для выпечки или противень, смазывать надо!

9. Сами сочники смажьте желтком с водой с помощью кисточки, и начинку, и тесто.

10. Пеките при 200 *С 25 минут.
