Пасха хороша тем, что делают ее из молока. Эта Пасха имеет нежнейшую текстуру, не склонна к истечению сывороткой и готова уже через 12 ч . После Пасхи остается сыворотка, которую можно использовать при выпечке куличей (вместо молока).

На просторах интернета подобный рецепт встречается под самыми разными названиями, то это «сыр», то это «десерт». На самом деле , по утверждениям людей вышедших из среды потомственных священников, это рецепт, по которому готовили Пасхи в старые добрые времена (еще до революции ). Как бы там ни было, авторы смело берут на себя смелость утверждать, что это лучший вариант Пасхи из всех возможных).

Вареная из молока и сметаны Пасха самой нежной текстуры.

Ингредиенты:

  • Сливочное масло – 250г , которое должно быть размягченным (но не топленым!).
  • Сахарную пудру – 1 или  1 ½ стакана .
  • Ванильный сахар (ванилин) – немного совсем.
  • Яйца- 10 шт.
  • Сметана- 1 литр
  • Молоко- 3 литра

 Учитывая это, каждый может сделать Пасху нужного ему размера, главное соблюсти пропорции продуктов и рекомендации автора.                                                  

Приготовление:

  • Яйца сбить венчиком , без фанатизма, не в пену, просто тщательно  размешать венчиком.
  • Сметану поместить в толстостенный сотейник объемом 4 л, размешать ее при помощи венчика и размешивая (сбивая) добавить  яйца.

  • Молоко (лучше деревенского жирного конечно или пусть пастеризованного высокой жирности, но с небольшим сроком хранения– не из тетрапаков и коробок, в которых молоко, что бы там не обещали производители, производится из сухого молока и бывает вообще не сбраживается!), вливать в сметану с яйцами размешивая венчиком.
  • Поставить кастрюлю с содержимым на варочную поверхность и медленно нагревать, периодически помешивая  все тем же венчиком.  Когда  отойдет сыворотка, слить содержимое кастрюли в дуршлаг проложенный марлей в 2 слоя (надо постараться не доводить смесь до кипения, сыворотка отходит на стадии, когда смесь горячая, но не кипяченая).

  • Сыворотка будет активно стекать с творожистой массы в течении 30-60 минут. Во время стекания сыворотки, можно аккуратно помешивать массу деревянной лопаткой (ложкой), что бы ускорить процесс стекания сыворотки.
  • Протереть творожную массу сквозь металлическое сито(это очень несложная манипуляция по причине того, что масса свежая и очень мягкая).
  • Затем следует выложить массу в миску и добавить размягченного (не растопленного, а предварительно размягченного!) сливочного масла – 250г, ванильного сахара немного (или ванилина ) и  сахарной пудры в количестве 1 стакана(объем стакана 250мл) и всю массу тщательно размешать. Любителям сладкого сахарной пудры можно брать и больше.

Формовка

Формовать можно не только в традиционных «пасочницах», но и в воронках (проложенных марлей), в кольцах металлических (проложенных пергаментом по бокам), дуршлагах (проложенных марлей), да в чем угодно– потому, что сыворотка с этой Пасхи не вытекает практически и Пасха готова через 1 сутки, в отличии от Пасхи из творога.

Что бы Пасху выложить на блюдо, надо отогнуть с основания Пасхи марлю, накрыть блюдом (тарелкой) и перевернуть всю «конструкцию», затем снять форму и аккуратно снять с Пасхи марлю.

Замечания:

За счет того, что масса Пасхи пластична, не склонна к истечению сывороткой, из нее можно ваять пасхи хоть в виде храмов J .

В массу можно добавить какао или иные красители, чтоб придать оттенок.

В эту Пасху совершенно лишним будет добавлять изюм или другие сухофрукты– очень нежная текстура (вы убедитесь, если приготовите). Разве, что украсив сухофруктами сверху, по бокам или присыпать верх тертыми орехами (именно тертыми!) или кокосовой стружкой.

После Пасхи остается СЫВОРОТКА, которую можно использовать ПРИ ВЫПЕЧКЕ КУЛИЧЕЙ (вместо молока).

Очень и очень вкусная Пасха.
